Welcome, Baby A.

  On Baby A's birthday, the c-section surgery went as planned. I walked into the OR around 9:30am and was pushed out around 2 hours later. W was instructed to wait outside while the team was getting me prepared for anesthesia. He then got invited to come in and sat next to me while the team worked on getting Baby A out of me 😂. W was a good DJ and Baby A was born while Taylor Swift's Shake It Off was being played. So...did I feel any pain during this life-changing surgery? No, I didn't. I had a spinal block. I never felt any type of pain during the surgery. Getting the anesthesia injected - however - was the most uncomfortable part of the surgery. There was a lot of pressure. I felt my back being pulled or pushed, or something. It just felt very uncomfortable, not painful, but very uncomfortable. It was also hard to try leaning toward the source of that uncomfortableness. Red and White Deviled Eggs (紅白魔鬼蛋)

"Deviled Eggs" is one of my favorite ways to enjoy eggs. It's great as an appetizer, snack, and works well as a side dish too. I usually use 6 eggs at once, so that gives 12 halves. There are many variations out there and you can experiment with different ingredients to make different yolk-mixtures. Deviled eggs can be spicy, salty, sweet, and anything in between. Can be classic without much "toppings" or make the egg-mixture with a theme like pulled pork (don't forget to add a scoop of that coleslaw), cajun (hmm spicy spicy), breakfast (ham/bacon), tuna salad (drain the tuna so it doesn't make the mixture too runny), fancy seafood (lobster, crab lumps), teriyaki (shredded chicken in a tangy teriyaki sauce yummm) etc. The options are endless!

"魔鬼蛋"是我很喜歡吃蛋的方式之一. 可以當前菜, 點心, 也可以當配菜. 我通常一次煮六顆, 這樣可以做12個. 魔鬼蛋的變化很多, 可以嘗試各種不同食材和蛋黃組合來做出不同口味的"餡," 辣的, 鹹的, 甜的, 都可以唷! 可以簡易又經典(基本款的概念), 或者做不同主題 像是手撕豬肉(別忘了加上那個甜甜coleslaw沙拉), 卡津風味(辛辣來吧來吧), 早餐系列(火腿/培根), 鮪魚沙拉(別忘了把水弄乾 免得蛋黃餡會太濕, 豪華海鮮(龍蝦螃蟹), 照燒(照燒雞絲也很不錯喔). 魔鬼蛋的變化真的很無限!

Aside from variations in the yolk-mixture, you can also play with the egg white too! An alternative to food coloring is to make your own natural-dye. This post is mostly about the red & white deviled eggs I made for Thanksgiving, which were made by using beet juice. I'll share a few other natural-dye options I know near the bottom of this post.

除了蛋黃餡的變化, 也可以嘗試蛋白的外觀變化喔! 可以自己做"天然的食物染劑"來替代外面賣的加工食用色素. 這篇主要是分享感恩節做的紅白魔鬼蛋, 染料是用甜菜汁. 這篇後面我也會分享一些我知道的其他可以在家自己做的天然食物染劑.


Main ingredients:

Eggs (hard boiled)


For the yolk-mixture:

Plain Greek yogurt (or mayo works too), 1-2 tablespoons

Dijon mustard (or ground mustard), 1/2 tablespoon

Salt, 1 tiny dash

Paprika (optional, for the yolk mixture or use as garnish)


For the natural-dye:

Beet juice (save juice from when roasting beet, or collect juice from store-bought canned beets), place the juice in a bowl 


Instructions:

1. Peel the eggs then carefully slice the eggs in halves. Carefully remove yolks and set the yolks into a bowl.

2. Add yolk-mixture ingredients into the bowl with yolks. Use a fork to mix them well, mash them, and taste it then make adjustment according to personal liking. If you use plain Greek yogurt then it'll be have a sour taste and have a thicker texture. If you use store-bought mayo then it'll be creamier and perhaps more sweet. Once you're happy with the mixture, give it a few minutes to rest and you just finished making the filling for deviled eggs!

3. Dip egg whites into beet juice, this will turn egg whites maroon-ish red. Pat dry egg whites or set on a paper towel to dry, then set the egg whites on a plate.

4. Use a small spoon to scoop the filling and put them into each egg white. 

Tip: Can also use a food-grade bag (like Ziploc or plastic sandwich bag) to pipe in the filling. Just put the filling into the bag and squeeze all into a corner. Snip the bottom of that corner then gently squeeze out the filling to fill each egg white.

5. Serve as is, or garnish with parsley flakes, paprika, freshly grinded pepper, chopped scallions etc. 

And you're done!


主要材料:

水煮蛋


製作蛋黃醬所需食材:

原味希臘優格 (或者美乃滋也可以), 1-2湯匙

芥末醬 (或芥末粉), 半湯匙

鹽, 一點點就好

紅椒粉, 可以加進蛋黃餡裡或者當裝飾


天然染色材料:

甜菜汁 (可以趁烤甜菜時採取甜菜汁, 或者使用甜菜罐頭的汁), 把汁放進一個碗裡


魔鬼蛋做法:

1. 把水煮蛋撥完蛋殼, 每顆蛋切成兩半, 然後小心地把蛋黃挖出來放進一個碗裡

2. 把蛋黃醬材料放進裝了蛋黃的碗裡. 用叉子把碗裡的東西拌勻. 邊拌勻邊試一下味道然後依照個人喜好看看要再加什麼做調整, 如果使用原味希臘優格的話口味會偏酸且比較濃稠, 若使用市售美乃滋會比較甜也會比較軟, 調味好後這就變成等等要用的蛋黃餡了

3. 把蛋白放進甜菜汁的碗裡來染色. 染上色的蛋白會變成紫紅色, 用餐巾紙擦一下 或擺在餐巾紙上等他乾一點, 然後在擺到一個盤子上

筆記: 因為我當時手邊有烤甜菜所蒐集的甜菜汁 所以汁液等於是煮過的, 若使用的是罐頭採取的汁, 最好還是煮到水滾再拿來當染料.

4. 用小湯匙把蛋黃餡放進每個蛋白裡

小提醒: 也可以用食用塑膠袋 (像ziploc)或三明治袋子來擠花方式來為蛋白填料. 把調好的蛋黃餡放進一個袋子裡, 然後把他們捏到袋子的一個角落, 在角落正下方剪一個小洞, 然後輕輕地把餡擠進蛋白裡.

5. 蛋黃餡放進蛋白後已經可以直接上桌, 也可以這時候撒些巴西里, 紅椒粉, 現磨黑胡椒, 青蔥丁丁 等作裝飾.

這樣就完成了!

 
 

These were so yummy! We finished all of the eggs by lunch on Saturday hehehe. We could probably finish all of the eggs on Thursday (Thanksgiving Day) but.....that's probably too much cholesterol from just one dish so I urged Mr. L to not finish all in one setting haha.

這些魔鬼蛋好好吃! 我們星期六就吃光光了! 其實大概星期四感恩節當天就可以吃光光 只是一次吃完好像膽固醇也會飆高 所以我還拉著Mr. L跟我一起忍著別一次吃太多 哈哈.

Other than using beet juice as an all-natural red dye, there are other ingredients you can use to make your all-natural food dye at home! 

Just add each of the following ingredients into a pot of water and vinegar and bring it to gentle boil and continue boiling for at least 20 minutes, be careful to not let the water evaporate. The vinegar should help with easier coloring if you want to leave shell-on-eggs in the dye overnight (for making Easter eggs). If it's just for a quick coloring, then vinegar is not needed. 

Turmeric + water = yellow dye

Blueberries + water = purple dye

Onion skins + water = orange / tan

Red cabbage + water = blue

Note: start with 1/3 cup of vinegar, 1-2 cups of the chosen ingredient (except for turmeric, 1-1.5 tablespoon of turmeric should be enough), and 2 cups of water (so there's enough water after at least 20 minutes of boiling & not evaporate too much). Each dye will boil in its' own pot. So if you want to make 4 dyes at once, then boil 4 pots of water! Go ahead and experiment with different amount of ingredients and time for boil to find desired color!

除了甜菜汁可以當作紅色染料之外, 還有其他的食材可以利用來在家自己做純天然的"染劑"喔! 

把下面的材料分別加進一鍋水跟一點醋, 煮到滾之後繼續小火煮至少20分鐘, 小心別讓水都蒸發囉. 加醋的用意是為了幫助還帶著蛋殼的蛋上色(帶殼蛋放在染料裡隔夜像是做復活節彩蛋). 如果只是要快速染一下顏色, 就省略醋吧.

薑黃 + 水 = 黃色

藍莓 + 水 = 紫色

洋蔥皮 + 水 = 橘色 / 米色

紅捲心菜 + 水 = 藍色

筆記: 先用1/3杯的醋, 1-2杯的選的材料(除了薑黃, 薑黃部分1或1.5湯匙的量就可以了), 以及2杯水(這樣滾水燉煮20分以上也應該不至於水分蒸發太多). 每個"染料"要用自己的一鍋來煮, 所以如果你想一次做4個染料, 那就是煮4鍋滾水囉! 發揮實驗精神來試試不同份量跟墩煮時間的組合來找找喜歡的顏色吧!
