Welcome, Baby A.

  On Baby A's birthday, the c-section surgery went as planned. I walked into the OR around 9:30am and was pushed out around 2 hours later. W was instructed to wait outside while the team was getting me prepared for anesthesia. He then got invited to come in and sat next to me while the team worked on getting Baby A out of me 😂. W was a good DJ and Baby A was born while Taylor Swift's Shake It Off was being played. So...did I feel any pain during this life-changing surgery? No, I didn't. I had a spinal block. I never felt any type of pain during the surgery. Getting the anesthesia injected - however - was the most uncomfortable part of the surgery. There was a lot of pressure. I felt my back being pulled or pushed, or something. It just felt very uncomfortable, not painful, but very uncomfortable. It was also hard to try leaning toward the source of that uncomfortableness. Unexpected trip to Eugene & reactions from 2nd dose of COVID vaccine

Last Friday, we had an unexpected road trip to Eugene! Eugene is not exactly a far drive from Beaverton, but if considering the fact that we drove 5 hours round trip mainly just for receiving the 2nd dose of COVID vaccine, then it became a "long trip."

Dutch Oven Salmon & Rice (鑄鐵鍋煮鮭魚炊飯)

Today I want to share about this super easy dish. Dutch Oven Salmon & Rice, or One-Pot Salmon and Rice, or 鮭魚炊飯. I first had something similar in Japan a long time ago. I made this a few times using an old Tatung Rice Cooker and it turned out to be a crowd-pleaser each time (or should say roommates-pleaser)! This week, I used my Lodge Enameled Cast Iron Dutch Oven to make this same dish and the two of us finished the entire pot in one setting!     I did a bit of Google search on using a dutch oven to make this dish because I've only used a rice cooker to make this before. Our old Tatung rice cooker is long gone, and I really wanted to try a different method of making it. I came across a blogger's post exactly about this dish! I followed most of the steps and substituted the kombu (and kombu water) with plain water + oden soup base. I used brown rice instead of white rice. Awareness - Creating & Implementing Community Interventions for Addiction & Recovery

Today I got to attend an online symposium organized by Addictions Coalition of Delaware County. It was more than I had expected. Admittedly, I initially signed up for it because it gave continuing education credits for a certificate I have (I have to attend training/conferences to receive 75 credits every 5 years in order to keep the certificate valid). But, this morning's meeting was wonderful and informative, and I plan on attending next year's symposium.
