Welcome, Baby A.

  On Baby A's birthday, the c-section surgery went as planned. I walked into the OR around 9:30am and was pushed out around 2 hours later. W was instructed to wait outside while the team was getting me prepared for anesthesia. He then got invited to come in and sat next to me while the team worked on getting Baby A out of me 😂. W was a good DJ and Baby A was born while Taylor Swift's Shake It Off was being played. So...did I feel any pain during this life-changing surgery? No, I didn't. I had a spinal block. I never felt any type of pain during the surgery. Getting the anesthesia injected - however - was the most uncomfortable part of the surgery. There was a lot of pressure. I felt my back being pulled or pushed, or something. It just felt very uncomfortable, not painful, but very uncomfortable. It was also hard to try leaning toward the source of that uncomfortableness. Mini Brownie Cakes, Godiva, and Harry & David

I'm not very keen on desserts. I know, I know. I'm that one weird person who doesn't like sweets and skips on dessert menus at restaurants. Nonetheless, Valentine's week gave me all the sweet vibes that got me motivated to bake something and to celebrate our anniversary with something sweet. I may not love sweets but W does have a sweet tooth 🍫.
 
I saw a post on Nourishing Amy's Instagram on Valentine's Day and decided to try baking a brownie cake (click to see the original recipe). I tweaked the recipe a bit, based on what we had and our preferences, and made two Mini Chocolate Brownie Cakes for us that afternoon.

Ingredients:
  • Flour, 35g
  • Sugar, 20g
  • Baking soda, 1 pinch
  • Godiva cocoa powder, 15g
  • Salt, 1 pinch
  • 1% milk, 90ml
  • Lemon, 1 light squeeze
  • Vanilla essence, 1 teaspoon
  • Olive oil, 2 tablespoons
  • Christmas mint chocolate, broken into smaller pieces for topping/decoration

Instructions:
  1. Preheat oven to 350°F and grease two ramekins (used olive oil for grease).
  2. Whisk together all the liquids in a bowl and set the bowl aside.
  3. Whisk together all the powder (everything that's non-liquid) in a different bowl. Nicknamed as the "dry bowl."
  4. Whisking the ingredients inside the liquid bowl while pouring the mixture from the "dry bowl," and whisk until everything looked well mixed together.
  5. Gently pour the batter into the ramekins.
  6. Bake for 30 minutes.
  7. Sprinkle crumbled mint chocolates. Let the brownie cakes chill for a few minutes then serve!
Poured just about a bit less than the half-full mark. I was worried about the batter overflowing so I placed a baking sheet underneath the ramekins.

These chocolate brownie cakes were made with an appreciation for friendships in mind because some ingredients were gifted by our friends.
 
The Godiva cocoa powder was a present from one of my professors I met in grad school. The chocolate that I refer to as "Christmas mint chocolate" was part of a Harry & David gift box from our friends in Colorado. The gift box contained so many goodies - fancy, juicy pears, sweets, a bag of "mint chocolates," and a bottle of wine. We can't drink the wine yet because we're TTC, and our friends don't know about this yet, but we will enjoy this bottle when the time comes 💖
 

 
The pears were so good. I didn't know I could love eating pears that much. They were so juicy, sweet, and just a great delightful treat. We had to tell ourselves to slow down so we didn't finish them all in 1 day.
 
 
Duke also enjoyed the few pieces of 1 pear he got to have. We were aware that too much sugar was no good for any furry baby so only shared a few pieces with him. He loved every piece! Lulu, on the other hand, enjoyed the "gift box" so much that she often sat in there and watched us move around before the box finally got thrown out, well, recycled.
