Welcome, Baby A.

  On Baby A's birthday, the c-section surgery went as planned. I walked into the OR around 9:30am and was pushed out around 2 hours later. W was instructed to wait outside while the team was getting me prepared for anesthesia. He then got invited to come in and sat next to me while the team worked on getting Baby A out of me 😂. W was a good DJ and Baby A was born while Taylor Swift's Shake It Off was being played. So...did I feel any pain during this life-changing surgery? No, I didn't. I had a spinal block. I never felt any type of pain during the surgery. Getting the anesthesia injected - however - was the most uncomfortable part of the surgery. There was a lot of pressure. I felt my back being pulled or pushed, or something. It just felt very uncomfortable, not painful, but very uncomfortable. It was also hard to try leaning toward the source of that uncomfortableness. Learning to relax while being uncomfortable was a very hard thing to do. But it was necessary. Once it...

Mother's Day Weekend & Korean BBQ

We decided to celebrate Mother's Day on Saturday instead of Sunday. I was a little unsure if Mother's Day applies to me yet, because, technically baby's not born yet. W insisted on celebrating so we chose to dine out for this special occasion (we've only dined out very minimally since the global pandemic began, and this is the first time of indoor dining at a restaurant since 2022 began). After *carefully* going over what I could eat (due to gestational diabetes), we decided on King Kong Korean BBQ!
 
It was our first time here. We chose their AYCE (all you can eat) option. We also went with the premium option because we wanted to include seafood as well 😁
The restaurant served us 6 different kinds of side dishes (banchan). I was looking forward to taking a bite of my favorite type of banchan "sweet soft potatoes" but they didn't serve this. The fish cakes were my favorite of the 6 side dishes that day. 
We love thinly sliced meat when it comes to Korean BBQ (and hot pot). King Kong's thinly sliced pork belly and brisket were yummy. 
 
We tried King Kong's "steamed egg" and it was pretty good. It came really slow (like 30 minutes after we ordered it) but I think it's just the nature of preparing a dish like such when it's made fresh, plus the restaurant was busy. I ate 2/3 of that bowl of hot steamed egg. Yum!
For the meats, I skipped on marinated meats to limit carbs intake (with the exception of 1 piece of coconut curry chicken, this was good but nothing extraordinary so I felt good to only tried one bite). W enjoyed his LA galbi. I so wished I could eat all the galbi there were...I love galbi! But the galbi sauce would have carbs and I didn't want to push my limit since I already allowed myself to indulge on the side dishes and some had a bit of carb already.  



There was a small selection of vegetables available for grilling. Our jaws almost dropped when we saw "1 slice of kabocha squash" when the server brought our plate over....I mean, we have two people...they should at least give us 2 slices???
The AYCE option included a bowl of white rice (I somehow expected mixed rice/purple rice because we often had those at other Korean restaurants). Because I chose to skip out on rice (it would raise my blood sugar), I asked the server if there's any lettuce. Lettuce is another thing that's pretty common at other Korean restaurants we've been to. Typically use the lettuce leaf to wrap up grilled meat and eat it like a lettuce wrap. To our surprise, King Kong also didn't serve lettuce for BBQ....so I improvised by making little "stacks" of meat with banchan 😂 The pickled radishes were very crunchy and fresh, sometimes I used sliced meat to roll up the pickled radish to eat with. Each bite was delicious.

In total, I had 8 plates of food that night...I left with a happy belly haha!! I took a picture of my plate each time before I started eating as a way to document how much I was eating. Eventually, I even added a glass of diet Pepsi because I had a strong crave for bubbles....

I was semi-worried about my glucose level because, even though I was careful with my carbs, I was still worried about the amount of food I had that night (it's an all you can eat after all). After we got home, I quickly got Duke on his harness and we went out for a 30 minute walk 😂 Then, I poked my finger...and there was no spike!! My glucose level was well within range (in the 90s). I felt so proud and empowered hahaha.
On Sunday (actual Mother's Day), W brought home flowers and a card. Duke was so excited about what's inside the envelope haha. He gets excited when he sees there's something that can be opened (like when I was taking the card out of the envelope).
 
Sunday night, W put together the first piece of furniture for the nursery - Hemnes dresser! Lulu immediately jumped on top of it to "try it out." It was a good weekend.
